Is there a list of open source plugins anywhere? Does anyone have some? Can I just download any plugin and open it in a IDE?

You can open up any plugin's .jar file with the jdGUI program. You can download it here: http://www.softpedia.com/dyn-postdownload.php?p=92540&t=4&i=1

Just open the jar, click file, and click save-all-sources and it will save the raw .java files in a .zip file wherever you want.

Thanks, I'll check it out. Do you happen to know of a list of actual open-source plugins, or a place I can find them?

im not sure about a list but you can always just look through bukkit dev, allot of plugins have a link to their source code on their plugin page

You can always open up a jar with a decompiler, you just cannot republish them, though(unless you have permission, of course).

Well you also can't really copy word for word the code from the plugins either, because that's also copyright infringement/plagiarism.
But you're allowed to get a basic idea on how it works.
