I intend to start learning Java, and although there are a fairly large number of Windows guides for installing various IDEs and setting up bukkit and craftbukkit within them, there are not many for Mac.

My first question is which IDE should I use on Mac? I am leaning towards Eclipse, but I am open to suggestions.
Secondly, am I correct in assuming Mac 10.8 comes with the correct version of JDK pre-installed?
Lastly, are there any guides for setting up Bukkit and Craftbukkit within Eclipse on Mac?

    Thanks :)

I would assume it is the same thoughout the OS'.
It is the same program so there really shouldn't be much of a difference if any.

Plus all you have to do is add bukkit as an external library and then you just go on coding.

Netbeans and Eclipse both run fine on my mac. I find that Eclipse is a bit faster compared to Netbeans, but it really doesn't matter very much.
