Ok so im going to buy an E-3 1230 16gb ram dedicated server in the next few days and i was wondering if it would be better to run each server on a virtual machine or would it run smoother running all the servers just on one os with no virtualization? Also the reason why i was thinking of a virtual machine is so i can assign each virtual machine a core and then it would use all cores but if i dont use virtual machines would each server use a different core or the same core?
    Thanks!

It would be better to run each server on a different virtual machine, as you are only able to dedicate "x" amount of ram to each server (on the dedi). In addition, you can expect to see lag if hosting multiple servers on one dedi obviously depending on the number of players that are playing. But if one computer is dedicated to one server it will not only be able to contain more slots, but you'll obtain better hosting results as a whole, also you can use this website as a basic determination of your computers/VPS's capabilities http://canihostaminecraftserver.com/

I would say no to using a vm. All I suspect it will do is take up more ram running the extra os's you have on them.

To be honest if you run them on the same machine the performance is still adequate, and really runs smoothly if you know what you are doing.
